Simply "Feta-ish" Greek Salad

Salad base
½ cucumber, chopped
½ red bell pepper, chopped
½ small red onion, diced
5 mini tomatoes, roughly chopped
5 Kalamata olives, pitted
2-4 tbsp tofu feta cheese
2-4 tbsp dressing
Toss everything together and enjoy
Dressing
¼ cup extra virgin olive oil
2 Tbsp Dijon mustard
2 Tbsp agave
1 squeezed lemon
¼ tsp sea salt
2 garlic cloves
Blend in a blender. Keeps for over a week in the fridge.
Tofu feta
-4 tablespoons nutritional yeast
-approx ½ teaspoon sea salt
-1 squeezed lemon juice
-1 package of extra firm tofu drained and cubed
Blend together in a food processor, not in a blender it will get too smooth. You want it crumbly like Feta. If you don't have a food processor you could mash it up with your hands and a masher.
