Simply The Best Banana Oatmeal Pancakes
Blend: 1 banana, 1 cup of oatmeal and 1 cup of plant based milk until smooth. Pour half into a non-stick pan and cook on medium heat until light brown on each side.
*Note: If you want them fluffier you can add ½ a teaspoon of baking powder and a ½ a teaspoon of apple cider vinegar into the blender.
For toppings, melt frozen berries and mash them up with Stevia or a soft ripe banana. Pour the berries over the pancakes. You can also add a thin layer of an all natural nut butter if you like.
*Makes approximately 2 large pancakes
